chocolate chip cookies! vegan-style

It only took me a week living in Texas to feel the need to restock my pantry with baking ingredients and make cookies, so I now am the proud owner of a bag of Bob's Red Mill Unbleached Whole-Wheat Pastry Flour. This flour is the best, seriously, you should get some. AND there is a vegan chocolate chip cookie recipe on the side of the bag for those times when you want to make vegan cookies for your housemate, and another batch a few days later for your housemates' sister too. Leave it to Bob's Red Mill to have the best recipes for whole wheat anything.

(Vegan) Chocolate Chip Cookies

1 buttery stick / margarine
1/3 cup oil
1 1/2 cups sugar (i like to use both white & brown)
2/3 cups milk (soy, rice, almond, cow)
2 tsp. vanilla
1 1/4 cups rolled oats
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/2 cup chocolate chips
1/2 cup chopped nuts

Mix butter, oil, and sugar(s) well. Stir in milk and vanilla. Add oats, flour, baking soda, baking powder, and salt, and mix until halfway blended. Throw in chocolate chips and nuts, stir completely. Allow to rest in the fridge for 20 minutes while you warm up the oven... Bake at 350 degrees for 10 to 12 minutes.
